When you want to serve something fancy, tasty, healthy, and put almost zero effort in preparation, raw cacao balls are to the rescue!
They are also great for those days when a medjool date stuffed with a walnut just don't do the job. Eyes also need a candy, you know what I mean?
- 1.5 cup walnuts
- 1/4 cup cacao powder
- 8 large dates
- 1/4 teaspoon vanilla extract - just a drop! Maybe even try without it first - it is not for everyone
- Coconut powder for coating, around 1 cup
Remove seeds from the dates and soak them in water for about 15-30 min. They should be on a softer side, so you can blend them well.
Blend all ingredients but the coconut powder together, until that mixture looks like a paste.
With your hands create little balls like on my photo.
Spread coconut powder on a large plate and roll those cacao balls in it until they are covered in coconut evenly. Sort of like making a snowman☃️
Put the balls on a parchment paper and leave in the freezer for at least 1 hour.
When you decide to serve them, transfer them to the fridge and wait at least 30 minutes before serving, so they soften up.
I can see you taking a cute little box of those raw cacao balls with a Bangles pouch on top as a sweet gift for your bff. My imagination runs wild, I know😁
